Oeufs mimosa is my go to recipe for Summer time: very quick and easy to prepare, they are the perfect combo for picnis, outdoors activies and just simple lazy

Hello everyone! Summer season is not over yet and temperatures are still up, what about cooling it down with this fresh and delicious oeufs mimosa? It can be served as an appetizer or main course and it's a classic in my family during Summer time.

The recipe is easy peasy and you'll be surprised on how little time it takes, so it's perfect for when you don't want to spend too much time in the kitchen and rather enjoy the lovely weather outside.
So let me share with you my family recipe of these
beautiful oeufs mimosa, which of course are gluten-free. I hope that you will like it as much as I do.

Oeufs mimosa or (not so) deviled eggs, a classic of mine for Summer time.

,or (not so) deviled eggs is one of my favourite recipes for summer time, I can never have too much!
 Not only it takes very little time but it's so easy to prepare that you'll be enjoying a delicious meal in no time!

With only 3 ingredients you can forget the "I don't feel like cooking right now", "I'm starving and need some food asap" or "I'm in a hurry and don't have much time to cook" (The struggle is real).  So take those eggs, tuna and mayonnaise and indulge yourself in a delish and fresh summer recipe with almost zero effort!

Ingredients

  • Fresh eggs (at least one per person)
  • Tuna
  • Mayonnaise

Instructions

  1. Boil the eggs to hard point (I add them to cold water and then bring them to boil), making sure that the yolk is set.
  2. Once that the eggs are boiled, remove the shell and cut then lengthways . Remove the hard yolk and toss it into a small bowl, smashing it a little bit so it'll be easier to make the stuffing mixture.
  3. Add the tuna and mayonnaise to the bowl as per your preference and mix it together until you get a creamy stuffing mixture.
  4. Fill the empty hole left by the yolks with the creamy stuffing et voilà! Your oeufs mimosa are ready to go. They can be eaten straight away though I suggest to let them chill in the fridge for some minutes, they will taste even better!
  5. Bon appetit! Enjoy your meal and make the most of your free time saved with this easy peasy recipe :)

Note: You can save some time by boiling the eggs in advance, so when the time comes you will only need to mix the ingredients and fill in the eggs.
